Saturated Fat: Common, Consequential, and Often Misunderstood

Saturated fat is solid at room temperature and found primarily in animal products. Its name comes from its chemical structure: carbon chains fully "saturated" with hydrogen atoms, leaving no double bonds. Unsaturated Fat: The Two Main Forms

Unsaturated fats have one or more double bonds in their carbon chains, which makes them liquid at room temperature. They divide into two subcategories:

  • Monounsaturated fat (MUFA): One double bond. Found in olive oil, avocados, most nuts, and canola oil. Diets rich in MUFAs are associated with improved LDL-to-HDL cholesterol ratios in population studies.

Trans Fat: Artificial vs. Natural Origins

Trans fat exists in two forms. Artificial trans fat — created by partially hydrogenating liquid vegetable oils to extend shelf life and improve texture — was once widespread in fried foods, margarine, and packaged snacks. Extensive evidence linked artificial trans fat to raised LDL cholesterol, lowered HDL cholesterol, and increased inflammation, leading the FDA to ban partially hydrogenated oils (PHOs) in the U.S. food supply.

Natural trans fat occurs in small amounts in the meat and dairy of ruminant animals (cattle, sheep, goats) through a biological process in the animals' digestive systems. Research has not demonstrated the same harmful cardiovascular associations for these naturally occurring forms.

When reading a Nutrition Facts label, a "0 g trans fat" declaration can still legally appear if a product contains less than 0.5 g per serving — so checking the ingredient list for "partially hydrogenated oil" remains worthwhile.
